Study on Functional Improvement of Various Crop Sprouts Grown under the LEDs

The research was carried out to investigate total polyphenol content, antioxidant activity, γ-oryzanol content, rutin and resveratrol content of various sprouts (rice, buckwheat, peanut) in different light conditions (fluorescent, blue, red, F-red, UV-A, UV-B, UV-C). The germinated rice sprouts were grown under the different light condition of 17℃ for 7 days. Total polyphenol content in germinated brown rice was higher in F-red (261 mg GAE/100g) and red (258 mg GAE/100 g) light than that of other light. The ABTS radical scavenging activity was 70% in F-red light, which was 1.3 times higher than that of the dark treatment (53%). The content of γ-oryzanol was increased up to 1.8 times in blue (48 mg /100 g) light compared to control (27 mg /100g). Buckwheat seeds were grown under the different light condition of 20℃ for 8 days. The total polyphenol content of buckwheat sprouts was higher in F-red and red (625 mg GAE/100 g) light than that of other light (493~603 mg GAE/100 g). The content of rutin (179 mg /100 g) in F-red light was the highest compared to control (126 mg /100 g). Peanut seeds were grown at 25℃ under the dark condition for 14 days. Then, the research was carried out at different light conditions for 24 hours. The total polyphenol content of epicotyl and leaf was about 288mg GAE/100g in blue light. The DPPH radical scavenging of cotyledon and hypocotyl were 1.3~1.5 times (63%) and 2 times (40%) higher compared to control (43%, 19%), respectively. The resveratrol content was increased up to 1.3 times in UV-B compared to that of other tissues. Assessing inclusively, this study showed that there was a significantly positive effect between increase of physiological substance activity and LED light treatment, resulting in stably producing sprouts vegetables. Therefore, the sprouts treated with LEDs are thought to be useful as a functional food resources.
