Session Description: Many underutilized food crops contain important or unique nutritional, flavor, and/or medicinal properties that could enliven and enhance dietary diversity, and thereby have significant positive health impacts through increased use on regional to global scales. This symposium will explore the latest research on breeding, genetics, agronomy, and health and nutrition of unique, underutilized and/or regionally novel crop species.
