This research examines the milling and baking qualities of early-harvested winter wheat cultivars. Our hypothesis is that early-maturing wheat cultivars together with early harvesting of the wheat crop decreases the likelihood of preharvest sprouting in white-grain wheat in high rainfall regions like Eastern USA; and will increase the opportunity to immediately seed a second crop after wheat harvest in the same crop production season. Preliminary data suggests that harvesting wheat at 18-22% compared to 13-14% grain moisture will increase the quality of the grain in certain aspects and not significantly decrease other milling and baking quality aspects.
